Chocolate Crinkle Cookies

     

Chocolate Crinkle Cookies
a kind of chocolate-flavored cookie covered in white powdered sugar.


 

Ingredients:
2 cups granulated sugar
 
3/4 cup vegetable oil
 
3/4 cup cocoa
 
4 pcs. eggs
    2 tsp. vanilla extract
    1 1/2 + 1/3 cup all - purpose flour
 
1/2 cup Peter Paul COCONUT FLOUR
    2 tsp. baking powder
    1/2 tsp. salt
    Powdered sugar, for coating cookies

Instructions:
In a large mixing bowl, stir together granulated sugar and oil; blending well. Beat in eggs and vanilla.

Stir together all - purpose flour, coconut flour, baking powder and salt; add to cocoa mixture, blending well. Cover and refrigerate until dough is firm enough to handle.
    Heat oven to 350 degrees Fahrenheit. Grease cookie sheet. Shape dough into 1 - inch balls; roll in powdered sugar. Place about 2 inches apart on prepared cookie sheet.
    Bake 12 to 14 minutes or until almost no indention remains when touched lightly and top of cookies are crackled. Removed from cookie sheet to wire rack. Cool completely.
    Yield: About 4 dozen cookies.
    Useful Tips: Use an ice cream scooper to shape the cookies into balls. Add cocoa to enrich chocolate flavor of cookies.
