Banana Fruitcake

     

Banana Fruitcake 

 is a cake made with chopped banana fruit and/or dried fruit, nuts and spices, and (optionally) soaked in spirit

Servings: 24 slices or 12 slices per loaf

Ingredients:
1 1/4 cup + 2 tbsp. all - purpose flour, sifted
 
1 1/4 cup + 2 tbsp. Peter Paul coconut flour
 
1 1/4 cup sugar
 
1/2 tsp. salt
 
2 tsp. baking soda
    2 tsp. baking powder
    1 cup vegetable oil
    6 pcs. egg yolk, beaten
    1 cup glazed fruits
    1/2 cup raisins
    3 cups mashed bananas
    1 cup cashew nuts, chopped
    6 pcs. egg whites
    1/8 tsp. cream of tartar
 
1/3 cup sugar

Instructions:
Sift together all - purpose flour, COCONUT FLOUR, sugar, salt, baking soda and baking powder in a bowl.

Make a well in the center and put oil, egg yolk, glazed fruits, raisins, mashed bananas and chopped cashew nuts. Mix well. Set aside.
    Beat egg whites with cream of tartar until soft peaks form. Add sugar gradually and beat until stiff but not dry; fold into butter.
    Pour butter into prepared loaf pans.
    Bake at 350 degrees Fahrenheit for 1 hour and 25 minutes.
    Yield: Weight: 2kg + 210 gms/2 loaves
