Banana Fruitcake
is a cake made with chopped
banana fruit and/or dried fruit, nuts and spices, and
(optionally) soaked in spirit
Servings:
24 slices or 12 slices per loaf

Ingredients: |

1 1/4 cup + 2 tbsp. all -
purpose flour, sifted |

1 1/4 cup + 2 tbsp. Peter Paul coconut
flour |
| |
|
1 1/4 cup sugar |
| |
|
1/2 tsp. salt |
| |
|
2 tsp. baking soda |
| |
 |
2 tsp. baking powder |
| |
 |
1 cup vegetable oil |
| |
 |
6 pcs. egg yolk, beaten |
| |
 |
1 cup glazed fruits |
| |
 |
1/2 cup raisins |
| |
 |
3 cups mashed bananas |
| |
 |
1 cup cashew nuts, chopped |
| |
 |
6 pcs. egg whites |
| |
 |
1/8 tsp. cream of tartar |
| |
|
1/3 cup sugar |
| Instructions: |
|
Sift together all - purpose flour,
COCONUT FLOUR, sugar, salt, baking soda and baking powder
in a bowl. |

Make a well in the center and put oil,
egg yolk, glazed fruits, raisins, mashed bananas and
chopped cashew nuts. Mix well. Set aside. |

Beat egg whites with cream of tartar
until soft peaks form. Add sugar gradually and beat until
stiff but not dry; fold into butter. |

Pour butter into prepared loaf pans. |

Bake at 350 degrees Fahrenheit for 1
hour and 25 minutes. |
